The Stella Artois Christmas Sensorium
In a private residence in South Yarra (Shannon Bennett & Madeleine West’s to be exact!) an exclusive group of media and marketing executives and industry figures gathered for a Christmas smorgasbord courtesy of Stella Artois.
The ‘Christmas Sensorium’ as it was known, was a three course lunch on a 39C Melbourne day put together by none other than celebrity chef Guillaume Brahini.
The canapé of Ortiz Anchovies (my all time favourite Spanish anchovies!) with salsa verde and an Espelette pepper was simply outstanding. And the French-style terrine on sourdough bread wasn’t bad either!
Guillaume’s seafood platter was phenomenal and included a mix of Coffin Bay live oysters with a mignonette dressing, dressed spanner crab, Western Australian Marron with a tarragon mayanaisse (unbelievably fresh!) and Port Phillip Bay scollops with lime, coriander and chilli that had you salivating from the mouth at the absolute freshness of such high quality Australian produce.
The residence, which had recently been sold by Shannon Bennett & Madeleine West, was taken over with dining tables after an initial plan to host 40 guests on a long table outside was abandoned due to the extreme heat. That made for an intimate gathering of four groups chatting about all things media, food and Christmas. The styling and space of the modernised old property was next level inspiration. From the furniture to the fittings to the artwork, it was a true pleasure to be in such a stunning location.
The main course dished up a succulent Wagyu rib-eye on the bone dish prepared on the outdoor BBQ smoker matched with a Stella Artois hot mustard mayo and Roast Pepper salsa. Some of the delicious sides included Kipfler potatoes, char-grilled hispi cabbage, raw courgettes and asparagus.
Dessert dished up pistachios with raspberry and vanilla. I was lucky enough to get the meringue and was absolutely to die for!
Stella Artois always puts on a great event, and the Christmas Sensorium didn’t disappoint. The chilled cold Stella Artois beer was flowing freely and on a 39C degree day, such a refreshing drop made it a whole lot more bearable!
